Recipe: Corn Casserole


Everyone loves a good corn casserole! Here’s a great go-to recipe the girls enjoyed making.

1 can drained shoe peg corn
1 can drained green beans
1 can  drained corn
1 can cream of celery soup
1/2 cup sour cream-add more if mixture seems dry
1-2 cups grated cheddar cheese
3/4 cup celery diced
3/4 cup onion diced
1/4 cup diced green pepper
1 tablespoon butter

Melt butter in a skillet. Sauté celery, onion and green pepper. Mix well with all other ingredients. Pour into a baking dish. Bake at 325 degrees covered with foil for 45 minutes. Then add topping and bake uncovered for 10-15 minutes longer until topping is golden.

Topping

One sleeve of crushed crackers (ex: Townhouse or Ritz)
1/2 cup butter melted
1/2 cup of slivered almonds

Blend and sprinkle on top of baked casserole and bake for time mentioned above.
