Greek night featured this family-favorite recipe from Director Cindy Nicholson!
3 packages frozen spinach thawed and squeezed dry
1 bunch green onions, sauteed
3 eggs, beaten
1/2 lb. feta or goat cheese
1 package pastry sheets or filo dough sheets
3 tsp dill
1/2 lb butter melted
Combine spinach, green onions, and dill. Add eggs and cheese.
Butter the bottom of a 9×13 pan. Cut filo dough to fit pan if necessary. Lay one sheet of dough and butter. Repeat for 8 layers. Spread spinach mixture on dough. Top with another 8 layers of filo dough. Cut before baking. Bake at 350 degrees for 1 hour. After 30 minutes, pour any remaining butter and continue baking for 30 minutes.
Makes 12 servings.
